- ½ medium onion diced
- 1 teaspoon butter
- 2 eggs
- ¾ cup milk
- 3/4 cup quick-cooking rolled oats
- 2 pounds lean ground beef 80/20
- 1 tablespoon ketchup or chili sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- 2 tablespoons fresh parsley chopped, or 2 teaspoons dried parsley
- 1 teaspoon Kosher salt & ½ teaspoon black pepper more to taste
Instructions
- Preheat the oven to 350°F. Coat a cooking pan with spray oil.

- In a medium bowl, combine eggs, milk, and oatmeal. Let the mixture sit for 5-10 minutes.
- Add the ground beef, cooked onions, ketchup or chili sauce, Italian seasoning, parsley, Worcestershire, and salt & pepper to the bowl. Mix until just combined.
- Form an 8″x4″ loaf on the prepared baking pan and bake for 40 minutes.
- While the meatloaf is cooking, prepare your mashed potatoes (add truffle oil at the end of prep), and English peas.
- Let the meatloaf rest for 10 minutes before slicing and serving.
